Bienvenue du Bailli: A New Chapter for Greater Miami at Casadonna

On September 19, 2026, the Greater Miami Bailliage of La Chaîne des Rôtisseurs celebrated Bienvenue du Bailli at Casadonna, the stunning coastal Italian waterfront restaurant created through a partnership between David Grutman’s Groot Hospitality and Tao Group Hospitality.

The evening marked a new chapter under Rene Buroz, Bailli de Greater Miami, who welcomed officers, local members, visiting members from other Bailliages, and friends for a celebration of fine dining and fellowship.

The Bailliage was especially honored by the presence of Thierry Peyroux, the recently appointed Consul General of France in Miami. His attendance brought particular significance to the occasion, reflecting La Chaîne’s French heritage and the friendships that connect its international community.

A Warm Welcome

The celebration began in Casadonna’s Entry Lounge with the Bailli’s Welcome Toast. Over glasses of Jeio Brut sparkling wine, guests renewed friendships, made new connections, and raised a glass to the arrival of their new Bailli.

The gathering then moved to the South Private Dining Room for dinner. Rene opened his remarks with a personal welcome to the Consul General in French:

“Bienvenue, Consul Thierry Peyroux ; c’est un honneur de vous avoir parmi nous.”

He warmly welcomed all those present and spoke of Miami’s evolving culinary world, looking forward to discovering new flavors and experiences together. His words captured the spirit of the evening:

“Good food brings us together. Friendship brings us back.”

A toast to the new chapter and the shared experiences ahead followed, concluding with an enthusiastic “Vive La Chaîne!”

A Coastal Italian Table

The dinner showcased Casadonna’s coastal Italian cuisine, beginning with focaccia accompanied by tomato, Taggiasca olive, and rosemary.

The first course featured Tomato & Burrata, with local burrata, wild arugula, and sunflower purée, alongside Calamari Fritti, served with zucchini, cherry pepper, and lemon-caper aioli. The wine selection included 2022 Feudi di San Gregorio Falanghina and Whispering Angel Rosé.

Entrées brought together New York Strip with roasted garlic, Branzino with leek caponata and pine nut, and Lumache Arrabbiata with Calabrian chili and basil, accompanied by truffle fries and insalata verde. 2021 Piandimare Montepulciano d’Abruzzo completed the dinner’s wine selection.

The meal concluded with Chocolate Torta, featuring caramel mousse and fudge, and Tiramisu, with ladyfingers and mascarpone—a sweet finish to an evening of generous hospitality.

Supporting the Next Generation

Following dinner, a raffle brought a charitable purpose to the celebration, raising funds for the Bailliage’s scholarship program with St. Thomas University. The initiative reflected a commitment to supporting the next generation of culinary talent and connecting the pleasures of the table with opportunities for those preparing to enter the profession.

Recognition and Appreciation

A special moment of the evening was the presentation to Consul General Thierry Peyroux of a commemorative gift featuring the emblem of La Chaîne des Rôtisseurs and a personalized plaque. Its dedication expressed the spirit of the presentation:

“In friendship and appreciation of our shared devotion to gastronomy and the art of the table.”

The gift was offered on behalf of the Greater Miami Bailliage as a gesture of friendship and appreciation, honoring his presence and the shared cultural traditions celebrated throughout the evening.

Lisbeth Mora, Executive Chef of Casadonna, received a Certificate of Merit in recognition of culinary excellence, gracious hospitality, and dedication to the art of the table. The presentation also expressed the Bailliage’s gratitude for her role in making the Bienvenue du Bailli dinner a memorable occasion.

La Chaîne pins were presented to the staff who served the event, acknowledging their attentive service and the care they brought to the guests’ experience.
